Mom’s Macaroni Salad
I finally found a recipe for macaroni salad that is very similar to my mom’s. When I was in elementary school, my parents and I lived in Washburn, North Dakota. My dad taught school and during the summer my parents managed a nine hole golf course. My mom would make large batches of potato salad and macaroni salad on ladies day and mens’ night to go along with either grilled steaks or hamburgers. Her macaroni salad was so good with ham, cheese, and peas…truly my favorite as a kid.
This recipe I found was similar but didn’t call for all the same ingredients so I took the recipe for the dressing and added my own add-ins like diced ham, cubed cheese, peas, and onions to make it just like my mom did for all the summers back in North Dakota.
This macaroni salad has a great flavor but is even better when you can make it the day before and let the flavors blend overnight. If it gets a little dry, add a little milk and stir before serving. This salad is perfect on a picnic or backyard BBQ. Feel free to add or omit add-in ingredients depending on your family’s taste.
