Gluten Free Pasta Recipe

 

Ingredients:

1 2/3 cups 1 to 1 gluten free flour (I use Bob’s Red Mill),

1 tsp Xanthan Gum

4 eggs

Directions:

Mix flour and Xanthan gum together in a bowl, make a well in the center, crack in 4 eggs, start mixing the eggs and slowly incorporate into flour. Mix until well combined. Knead a few times on the counter. Divide dough into four equal parts. I wrap 3 of the parts individually in plastic wrap while working with the other piece of dough. This keeps them from drying out.  I can typically work the gluten free pasta dough thru the pasta machine until setting 5 before I move it to the cutting area. Enjoy!
