One Week Meal Plan – Creamy Potato Soup
In my one week meal plan on Friday I have scheduled Creamy Potato Soup. This recipe is so easy and it makes quite a bit. I love it because we often have leftovers I can freeze in my 1 cup SouperCubes to pull out of the freezer for an easy lunch or as a dinner along with a garden salad and some bread if I’m “In a Pickle” for a dinner idea or on a cold evening.
How to Make Potato Soup
This creamy potato soup is so easy to make in a large saucepan or dutch oven. First, start by browning 5 chopped up strips of bacon. Once browned, remove bacon from the pan and add 2 tablespoons of butter to the bacon grease. Then add in your chopped medium onion and cook until the onion is translucent. Add in the minced garlic and flour until well incorporated. Next add in the diced potatoes, chicken broth, milk, heavy cream, and salt and pepper to taste. Bring this mixture to a boil and cook until the potatoes are fork tender. Reduce the heat and use an immersion blender to puree the soup to your desired consistency. If you do not have an immersion blender, you can carefully transfer the soup to a regular blender and puree Next add the sour cream and cooked bacon and stir well. Continue to simmer the soup for at least another 15 minutes. Serve hot with a garden salad and some dutch oven bread & butter.
You can turn this Creamy Potato Soup into Loaded Baked Potato Soup by topping your bowl with a dollop of sour cream, shredded cheddar cheese, crispy bacon bits, and chives…Enjoy!
