Easy Breakfast or Healthy Snack – Granola!

Who loves Granola? I do! And so do my girls! It’s an easy breakfast, a healthy snack, or put it on top of yogurt for a dessert. But it can be expensive to buy, but it’s so simple to make at home.

On the weekends, we make a batch or even a double batch of granola depending on how much we’ve been eating lately. When you make your own, the sky is the limit with the ingredients you can add. We like a simple vanilla cinnamon granola with cashews. But you can add any nuts you prefer or seeds. Dried apples, pecans, and pumpkin seeds make a perfect “Autumn” granola. Got a sweet tooth? Satisfy it with a peanut butter and chocolate chip granola. 

Inexpensive Granola to Make at Home

Making granola is very cost I help moms who are fully engaged in their family’s life get home-cooked meals on the dinner table with ease! when you purchase your ingredients in bulk. I buy the gluten-free rolled oats (in a 25 lb. bag) and coconut oil (in a 1-gallon jug) from Azure Standard. I purchase our mesquite honey locally by the half gallon and buy the cashews and cinnamon from Costco Online. Soon I will be using my own homemade vanilla extract.

Vanilla Cinnamon Granola Recipe

So here’s how easy it is to make our Vanilla Cinnamon Granola. Crush about 1 cup of cashews. Add 3 cups of rolled oats, 1 tsp. cinnamon, 1/2 tsp. salt to a bowl and mix well. Next add 1/3 cup of coconut oil, 1/4 cup of honey, and 1 Tblsp. of Vanilla Extract and mix until all ingredients are well incorporated. Then mix in the crushed cashews. Transfer to a parchment lined baking sheet at bake for 30 mins in a 300 degree oven. Stir after 15 mins. Remove from oven. If you like larger chucks of granola, allow to complete cool prior to stirring. Store in an air tight container.
