Quick and Easy Homemade Chili

This past week was National Chili Day! Nothing warms you up better on a cold winter evening than a hot bowl  of chili topped with shredded smoked cheddar cheese served with a slice of cornbread and butter.

There are many different chili recipes depending on the area of the country you live in. To some people, it is almost a crime to eat chili with beans. Well, here in Arizona, my recipe has beans as well as meat so some would call it a Chili Con Carne. It is so quick and easy you can whip it together on the busiest of week nights however the longer it simmers, the better the flavor!

Just add a can of rotel, a can of black beans, and a can of ranch style beans to your grocery list along with an onion and a pound of ground beef and you have the makings of this “Easy Chili Recipe”. Double or even triple the amount if serving more than four people or if leftovers or additional freezer meals are desired. If you have ground game meat such as elk or venison these can be easily substituted in this recipe!

Simply brown the meat in a skillet, add the onions to brown, drain the greese if necessary. Then add the can of rotel and the two different kinds of beans. Add the chili powder, garlic powder, and salt and pepper to taste. Simmer for at least 45 minutes. The longer it simmers, the better it tastes!

Some sides for this quick and easy chili recipe would be a simple garden salad and some cornbread. My family loves to top the chili with shedded smoked cheddar cheese!

This recipe can be found in my 4 week meal plan which includes 28 homemade recipes preplanned over the course of 4 weeks along with shopping lists so you never miss having an ingredient to make dinner for your family.
